Avocado Scallion Sauce Recipe

    2 avocados, pitted

    4-5 scallions, ends trimmed, roughly chopped

    1 cup packed parsley leaves

    1/4 cup packed cilantro leaves

    2-3 cloves garlic, peeled

    2 tablespoons extra virgin olive oil

    1 teaspoon salt

    1 teaspoon maple syrup

    Juice of two limes

    Scoop flesh from avocados into bowl of a food processor. Add remaining ingredients and blend until smooth, leaving visible specks of green from herbs and scallion. Taste and adjust seasonings. Serve immediately or store in refrigerator for several days. To keep avocado from turning brown when storing, place a piece of plastic wrap directly on the sauce so no air can get to it, then cover with a lid.
