Part of what makes food presentation beautiful is the way things are cut. A fresh, colorful salsa for example, looks more professional and appealing if the shapes and sizes of the ingredients are similar. Don’t tackle the ingredient all at once.
1. Start with a sharp knife, and cut it into manageable pieces.
2. Then cut those pieces into smaller ones, all of similar length and width. Using a pepper as an example, cut the whole thing into strips first, then lay them in small batches alongside each other and cut crosswise to get same-sized pieces. Think of an assembly line, and group similar motions together for efficiency.
